I love cookbooks and especially church cookbooks. The people who share their recipes in these books seem to put the best ones in. This meatball recipe I have been using for the past 15 years. It is in the cookbook from our former congregation. The person who submitted it was a very good friend. We walked every morning, rain, shine, snow or fog. There was a lot of fog because we lived a few blocks from Lake Michiagn.
So here is the recipe - very easy, few ingredients and great leftovers too.
Oven Meatballs
1 1/2 lbs gr beef
3/4 c oatmeal
1 1/2 t salt
1/4 t pepper
3T chopped onion
1 c milk
There really is no better way to mix this but getting right into it.
I use my hands.
roll them in balls and place in a greased 9x13 pan
Then you mix 1 c catsup
2 T sugar
3T vinegar
1/2 c water
Mix well and dump over the meatballs
Bake @ 350 for 1 1/2 hours (uncovered)
and enjoy !!!
